1. Mix rice with 1 tbsp lemon juice while warm.
2. Combine rice and chickpeas in a bowl. Stir in lemon zest, remaining juice, and oil. Let cool.
3. Stir in cheese, tomatoes, mint, and onion. Season with salt. Refrigerate until ready to serve.
Can be refrigerated for up to 2 days.
