Bring milks, sugar, almond extract, and a pinch of salt to a boil in a saucepan over medium heat. Add couscous, dried cherries and cinnamon stick; cover and cook 2 minutes. Remove from the heat and let sit, covered, 8 minutes. Fluff with a fork, remove the cinnamon stick and divide among bowls. Top with toasted almond slices and honey, if desired.
