1. Pour coconut oil and chopped garlic into a saucepan, over medium heat, and sauté the garlic until lightly browned.
2. Add vegetable broth to the saucepan, allowing everything to simmer for about 5 minutes.
3. Add 1 cup of water along with lentils and allow to simmer (uncovered) for about 20-30 minutes until they are soft. Add rosemary and drizzle olive oil near the end.
