  • 1 pound ground beef
  • 1 cup Cheddar cheese shredded
  • 1 cup Swiss cheese shredded
  • ½ cup green onion chopped, Optional
  • 8 eggs
  • cup instant potato flakes for keto do not include.
  • ½ cup heavy whipping cream
  • salt
  • black pepper

Instructions

  • Preheat oven at 325º F.
  • Heat a large skillet over medium-high heat and place the in ground beef the skillet.
  • Cook and stir until sausage is crumbled and evenly browned, and fully cooked should take about 10 minutes.
  • Drain and discard any excess grease.
  • Spray 12 muffin cups with cooking spray.
  • Sprinkle sausage, Cheddar cheese, Swiss cheese, and green onion evenly into the prepared muffin cups.
  • Beat eggs, potato flakes(optional for keto), and cream together in a bowl; season with salt and pepper.
  • Pour egg mixture evenly over the sausage-cheese mixture in the muffin cups.
  • Bake for about 22 minutes.
  • Cool let the Crustless Mini Quiches before serving.

Notes

**For Keto, If your not including the instant potato flakes subtract 3g from the carb count.
