2 tbsp butter
2 tbsp flour
1 pint shucked oysters, with their liquor
1 1/2 tbsp dry white wine
2 tsp minced parsley
Salt and ground pepper to taste
Procedures : Melt the butter in a saucepan. Stir in the flour and blend until smooth.
Measure oyster liquor, add enough milk to make 1 cup, and slowly stir mixture into saucepan. Cook, stirring, until the sauce is smooth and thickened.
Stir in the wine and oysters and cook 1 minute. Add parsley and salt and pepper to taste, and simmer 2 minutes more
