Popeye’s Muscle Salad

Ingredients
1 cup baby spinach
1 cup salad greens
1/2 avocado, diced
1 hard boiled eggs, peeled and carefully sliced
2 tbsp pecans, chopped
2 tbsp dried cranberries

1 1/2 tbsp olive oil
2 tsp vinegar
1 tsp dijon mustard
salt and pepper

Instructions:

Combine all ingredients in a bowl, toss, and serve.

Use whatever vinaigrette you want.
