Samosa baked potatoes

Ingredients
4 russet potatoes, scrubbed clean
1 yellow onion, chopped
1 tbsp ginger, minced
1 tsp mustard seeds
olive oil
1/4 cup cilantro, chopped
1 cup peas, cooked
4 tbsp yogurt

Instructions:

Preheat oven to 400F. Pierce potatoes all over with fork. Place directly on oven rack and bake for 1 hour. Meanwhile, cook onion, curry powder, ginger, and mustard seeds in olive oil until lightly browned. Scoope out the flesh of the potatoes, mash with onion mixture, cilantro, and peas. Stuff into the skins. Top with yogurt.
